Dropped Frames: the RTX2080Ti dropped 77% less frames than the 1080Ti. (Red, BM DNG, BM raw, XAVCS, GoPro, ProRes - with complex grades)
Render Times: the RTX2080Ti is 5% faster at rendering (Red, BM DNG, BM raw, XAVCS, GoPro, ProRes - with complex grades)
Scrubbing the Timeline: The RTX2080Ti scrubbed the BM raw and BM DNG 'a bit better' than the 1080Ti. (Didn't notice any difference with the RED, GoPRo, XAVCS and ProRes footage)
