In Star Wars The Last Jedi we got the Broom Boy ending, where Rian Johnson added this new scene outside of the script to show us that the galaxy is filled with force sensitives, and that the last Jedi won't end with Luke Skywalker or Rey or anyone for that matter, as there will ALWAYS be a new one.
Mark Hamill has a few things to say about the scene as well which I thought provides some closure on the topic.
